Introduction
I have celiac disease and an egg allergy yet I NEVER feel deprived of taste with this amazing summer salad. The sweetness of the strawberries, tangy black berries paired with the strong taste of goat cheese make for an amazing pairing of flavors. Feel free to omit the tofu and replace with freshly grilled salmon or gluten free grilled chicken tenderloins. Ingredients

2 cups Organic Baby Spinach, rinsed and patted dry
2 cups Baby Romaine. rinsed patted dry
1/4 c. Allouette crumbled goat cheese
1/2 c. fresh blackberries, rinsed
1/2 c. fresh strawberries, rinsed and sliced
4 asparagus spears, chokes cut off
3 Tbsp. TJ Marzetti's Light Berry Balsamic Dressing
1/5 package of Naturally Preferred Organic Extra Firm Tofu
Directions
Prep: Thinly slice the tofu and poke holes into it with a fork. Place in a gladware type container. Measure 1 Tbsp of dressing and pour over tofu. Let marinate for 2-3 hours
Prep #2: Clean and cut asparagus. Plus in George Forman type grill. While grill is heating. spray each spear lightly with gluten free cooking spray. Place spears on grill and grill to desired consistency. Remove asparagus and allow to cool. Chill in refridgerator for about 2 hours
1. Clean spinach and romaine and spin until dry
2. Clean berries and slice strawberries
3.Plug Foreman type grill in; remove tofu and asparagus from fridge
4. Place tofu on heated grill and pour dressing on top (if desired) before closing lid; let grill for 3-6 minutes, checking once or twice
5. Whil tofu is grilling, place lettuce and berries in ziploc bad; add remaining 2 Tbsp dressing. Shut bag and shake vigourously until berries, lettuce and dressing are mixed throughly.
6. Pour salad mix from bag into bowl/plate. Remove tofu and place on top of salad. Pour 1/4 c. crumbled cheese on the salad and then place the 4 spears on top.
