Ingredients

1 cup unsweetened applesauce
3/4 cup brown sugar
2/3 cup Splenda
1 egg
1 tsp. vanilla
1 1/2 cups raisins
2 1/2 cups oatmeal
1 1/2 cups sweetened coconut
1 1/4 cups flour
3/4 tsp. baking powder
3/4 tsp soda
1/4 tsp salt
1 Tbs. cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1/4 tsp allspice
Directions
Makes 3 dozen cookies.
Note: coconut can be omitted for lower fat and lower calorie cookies.
Mix together applesauce, brown sugar, splenda, egg and vanilla. Mix together oatmeal ,raisins, coconut, flour, baking powder, soda, salt and spices.
Add wet ingredients to dry ingredients.
Use a small ice cream scoop to drop onto cookie sheet sprayed with cooking spray.
Bake at 350 degrees for approximately 15 minutes.
