Introduction

This large Summer Salad is a meal in itself for lunch or dinner. I like to vary the type of lettuce, spinach or other garden greens as well as the fresh vegies available out of my garden or from the Farmer's Market (summer squash, snap or snow peas, broccoli, etc.). Also adding a tablespoon of sunflower seeds or slivered almonds is a great protein addition, or a serving of salmon or tuna on top for a non-vegetarian version of this garden salad. Ingredients

    1 cup fresh baby spinach
    1 cup fresh baby lettuce greens
    1/4 cup raw grated or slivered baby carrots
    1/4 cup raw chopped red, yellow or green sweet bell pepper
    1 med. Roma tomato, chopped or wedge sliced
    1/4 cup sliced or cubed summer squash (yellow, zucchini, scallopini)
    1/4 cup peeled and sliced tart apple (granny smith, pink lady, etc.)
    1 oz Trader Joe's Fat Free Feta cheese crumbles
    2 Tbsp Newman's Own Low Fat Sesame Ginger Salad Dressing

Directions

This is a large single serving main meal salad which can be increased for two or more.
