Introduction

made with 93% lean ground turkey, whole wheat bread crumbs. made with 93% lean ground turkey, whole wheat bread crumbs.

Ingredients

    Ground turkey, 93% lean, 16 oz
    Nature's Own Double Fiber* Wheat Bread, 4 slices broken into crumbs
    Contadina (Tomato Sauce), 8 oz
    Yellow Sweet Corn, Frozen, 1/2 cup kernels
    Taco Bell Taco Sauce, Mild, 4 tbsp
    Peppers, sweet, red, fresh, 1/4 medium chopped
    Green Peppers (bell peppers),1/4 of a pepper chopped
    Onions, raw, 1/2 cup, chopped
    Red Ripe Tomatoes, 1/2cup, chopped
    Heinz Ketchup - No salt added, 4 tbsp
    Chili powder, 1/2 tbsp
    Garlic powder, 1/2 tbsp
    Cummin 1/2 tsp
    Italian seasoning 1 TB
    Chili powder 1 TB
    salt and pepper optional
    Extra Light Olive Oil, 1.5 tbsp
    Egg, fresh, 1 large

Directions

Place ground turkey in large bowl, add bread crumb, chopped onion, chopped red and green peppers, chopped onion, celery and chopped tomatoes. Add 3/4 of tomato sauce, reserving remaining sauce for top. Add olive oil, seasonings, salt and pepper as desired, combine all added ingredients well. Form into a loaf. Put loaf in baking pan or dish.

Topping put remainder of tomato sauce in a small bowl, add ketchup, and seasonings as desired. I put a little chili powder, and garlic, and stir. Spread topping over loaf. I added water to the pan, just enough to slightly over the bottom.

Place a sheet of aluminum foil loosely over the top of the meatloaf and place in the oven for 30 minutes. Remove the foil after 30 minutes and continue to cook for an additional 15 minutes. Remove from oven, slice and serve. Serve 4 to 6 ppl

* note, I use the Contadina tomato sauce, it has less sodium than the rest. This was good, I thought it was missing somethng. My BF thought it was good, just he said it was probably salt. I don't add salt only what is already in the products naturally or manufactured.
