Introduction

These are tasty salmon cakes with a south of the border flavor.
They are great with a Caesar Salad or rice pilaf ( if you aren't watching carbs.)

Number of Servings: 4

Ingredients

    7 oz canned salmon (Kirkland)
    2 oz softened cream cheese
    2 Tbs mayo
    2 Tbs cilantro or to taste
    3 Tbs chopped onion
    Juice from 1/2 lime
    Zest from 1/2 lime

Directions

Mix cream cheese and mayo together. Stir into salmon and add all other ingredients except the almonds. Crush up almonds and coat patties in the almonds.
(Not watching carbs, use bread crumbs)or use your favorite nuts if you like.

Fry in a little olive oil for about 2 minutes on each side or until golden brown.

This recipe makes 4 patties, approximately 1/4 c. per patty.
