Ingredients

    1 lb lean ground turkey Browned
    1 small onion Diced
    1 small sweet red pepper Diced
    1 cup zucchini Diced
    10 mushrooms Sliced
    2 cups cooked brown rice Chilled
    1 can bean sprouts Drained
    3 tbl olive oil
    2 tbl Lite Soy Sauce

Directions

Make rice as package directs.(1 cup uncooked rice makes 2 cups cooked).
Brown ground turkey. No oil needed.
Take out of pan and add mushrooms, onion, red peppers, zucchini and 1 tbl olive oil and saute. Also can raise heat and stir fry to get browner and more flavor. When done, add browned turkey, rice, bean sprouts and 2 tbl olive oil. Just heat thru. Add soy sauce, toss and serve.
I used some left over grilled asparagus instead of zucchini. Can use whatever veggies you like.
