Ingredients

    1 tbsp vegetable oil
    1 small onion (chopped)
    4 garlic cloves (chopped)
    Indian Spices (curry, cumin, tumeric...)
    2 cans of chick peas
    Liquid from one of the cans of chick peas
    Small can of tomato paste (a bit more than 3 tbsp)
    1 tbsp of light peanut butter

Directions

-Brown onion and garlic in vegetable oil
-Add indian spices and stir until fragrant
-Add chick peas and reserve liquid from one of the cans.
-Stir until each chick pea seems well coated.
-Add tomato paste and mix well
-When heated through, take 1/3 to 1/2 of the mixture and put it in blender.
-Use the blender to make a paste, and put the paste back with the mixture.
-Stir well and add the peanut butter.
- Serve on top of cooked basmati rice

I'm not good with portions, but if I take about 1/2 to 3/4 cup of the mixture per meal, I get about 10 meals.
