Introduction
I originally posted this recipe as a vegan energy bar and my SparkFriend Molly (IWILLTRANSFORM) remade it to increase the amount of protein in the bars. She also made it without added sweetner (agave) and used dates instead. Her posted version calls for 1/2 C of chocolate chips, I used currants instead. Feel free to use the chocolate chips but they will alter the nutrition info. Ingredients

3 Tbs plus 2 tsp flaxseed meal (21 g)
1/4 warm water (add more if mixture is too dry)
1 Tbs Vanilla extract
2 scoops of plain, unsweetened protein powder (I used 30 grams of Jarrow Plain Brown Rice Protein)
1/4 tsp baking powder
1/4 tsp baking soda
1 Tbs carob powder
1 C sunflower seeds (120g, process 2/3, keep 1/3 whole)
45 grams walnuts
2/3 C chopped dates soaked in water just to covering
1/2 C currants
Directions
Makes 12 bars.
Preheat oven to 350 degrees.
Spray and 8x8 pan with cooking spray and set aside.
Mix flaxseed meal with warm water in small bowl. Use food processor to chop dates and put in measuring cup (2/3), fill with water til covered. Add date mixture and vanilla to flax and stir til combined.
Process 2/3 of the sunflower seeds and walnuts. In large bowl combine nut mixture with rest of dry ingrediants. Stir in wet ingrediants until well combined. Spread mixture out in baking pan and press down firmly and evenly.
Cook apprx 23 minutes. Cool in pan for 10-15 minutes and then transfer to cooling rack. Once cool cut into 10 bars. Enjoy.
