Introduction

A great way to get your kids (or spouse!) to eat their vegetables. But it's so good, you'll want to eat the whole thing yourself. A great way to get your kids (or spouse!) to eat their vegetables. But it's so good, you'll want to eat the whole thing yourself.
Number of Servings: 4

Ingredients

    10 oz. frozen spinach
    1 can Cream of Onion Soup
    (reduced fat & sodium)
    2 tbsp margarine

    1 lb. lean ground turkey
    6 oz. box of cornbread stuffing
    1 cup water
    1/4 parmesan cheese

Directions

Preheat oven to 400 degrees.


In a large saucepan, place frozen spinach, half of the soup, and margarine. Bring to a boil, cover and simmer for 5 minutes.


Meanwhile, in a large pan, brown and break apart ground turkey.


Break the spinach apart with a fork, when finished, and mix the stuffing into the mixture. Spread into a large baking dish. Cover with the ground turkey.


Mix water into remaining soup and pour over the top of the turkey. Sprinkle parmesan cheese on top and bake for 15 minutes.


Serves 3-4.

    I used left over turkey breast and cream of celery also--I agree that you should season the turkey a little, but otherwise fast and easy and everyone ate it! - 3/16/10

    Incredible!
    I just made this; it was so delicious! I am not a cook by any means and this was very easy for me. I used cream of mushroom instead and seasoned the turkey with a little garlic pepper. Definitely recommend it. - 12/17/09

    This recipe was great. I used turkey breast tenderloins that I already had in the fridge. I also used cream of celery soup, because I happened to have that also. Turned out marvelous!! Thank you for a wonderful way to eat spinach. My husband was talking about how good it was the next day. - 1/5/09

    Very tasty and filling! I would recommend seasoning the turkey a little, or maybe using turkey sausage for a little added twist. - 4/29/08
