Ingredients

10 oz. frozen spinach
1 can Cream of Onion Soup
(reduced fat & sodium)
2 tbsp margarine
1 lb. lean ground turkey
6 oz. box of cornbread stuffing
1 cup water
1/4 parmesan cheese
Directions
Preheat oven to 400 degrees.
In a large saucepan, place frozen spinach, half of the soup, and margarine. Bring to a boil, cover and simmer for 5 minutes.
Meanwhile, in a large pan, brown and break apart ground turkey.
Break the spinach apart with a fork, when finished, and mix the stuffing into the mixture. Spread into a large baking dish. Cover with the ground turkey.
Mix water into remaining soup and pour over the top of the turkey. Sprinkle parmesan cheese on top and bake for 15 minutes.
Serves 3-4.
