Introduction

This is a great sugar-free recipe that is like the one from Panera and their Strawberry Poppy Seed and Chicken Salad. I use Baby Greens, mandarin oranges, blueberries, sliced strawberries, sliced almonds, baked chicken, pecans (or any combination of them that I have on hand) This is a great sugar-free recipe that is like the one from Panera and their Strawberry Poppy Seed and Chicken Salad. Ingredients

1 cup Canola Oil (but any kind will be fine)
    1/3 Cup Apple Cider Vinegar
    1/2 Cup of Splenda
1 Tablespoon grated, raw, sweet onion
    1Tablespoon Poppy Seeds
    1 Teaspoon Salt
    1 Teaspoon Ground Mustard

Directions

Grate the Onion. Put all the ingredients in a blender or food processor. Process on High for about 3 minutes until thick. Store in an airtight container. Refrigerate for at least an hour before serving.

This will need to be whisked before serving, as the ingredients will separate.

Dressing is good for up to a week in the refrigerator.
