Introduction

I had always wanted to make and eat curry chicken. But after sifting through a million different recipes I decided to put my own spin on it as I am not overly fond of super spicy food.

Number of Servings: 6

Ingredients

    2 large scallions
    Fresh Ginger - 2” in length
    4 cloves of garlic
    1packet of Instant chicken broth mix
    2 tsp Curry powder
    1.5 tsp Chili powder
    1 cup Water
    Two tbsp Honey
    One tsp Flour
    3 or 4 large chicken breasts
    Butter

Directions

Chop the scallions and place into a large saucepan

Peel and halve garlic and also place into a large saucepan

In two tablespoons of butter and turn the heat on medium to sauté

Peel and slice ginger into manageable slices then halve them and place into the pan

Trim fat and cut up the chicken

Place chicken in the pan to brown

Mix up curry, chili and chicken broth with water in a bowl

Mix into the sauce pan

Let simmer for 25 to 30 minutes on low

After 5 minutes add in honey and cover again

When timer goes off, separate liquid from chicken into a different pan

Set heat on low and add in an extra spoon of honey and the flour to make a thick sweet sauce

Serve with rice when done
