Ingredients

4 Chicken Thighs
1 can Mixed Vegetables
1 large Onion
1/2 large Green Bell Pepper
1 tbs Ginger Root (grated)
1 tbs Olive Oil
1 pat Butter (salted)
2 tbs Curry powder
1 tbs Coriander (ground to powder)
1 tsp Crushed Red Pepper flakes
1 tsp White Pepper
1.5 tsp Black Pepper
1.5 tsp Salt
3 cloves Garlic (minced)
2 tsp Garam Masala
1 Star Anise
1 tbs Hummus (only if desired for mild chick pea flavour)
Directions
Chop sweet pepper & onions. Peel and grate ginger. Mince garlic cloves. Cut chicken into bite size pieces. Melt butter in olive oil on medium heat. Add onions, green peppers, and ginger. Add all spices EXCEPT Garlic, Garam Masala, Hummus and Star Anise. When onions are browned (about 6 - 7 mins), add Garlic and Garam Masala and cook for another minute or 2 on low heat. Add the Tomato Sauce, Star Anise, Hummus and Chicken. Stir thoroughly and allow to simmer for about 20 mins. Add mixed vegetables.
Serve with half a roti (approx. extra 150 calories) or a serving of your favourite rice. Don't forget to add these additional calories
NOTE:
1) If chicken is fatty, you may want to brown/grill chicken first.
2) If you do not like it too hot and spicy leave out the pepper flakes or add them a quarter teaspoon at a time and taste 5 mins afterwards each addition to test heat level.
