Introduction
This is a great recipe for a gluten free, sugar free or low calorie diet. We use a Blendtec blender (similar to a VitaMix Blender). You could also try using a food processor. Makes a very light ice cream - more like ice milk vs. a heavy ice cream - but a refreshing summer treat nonetheless! This is a great recipe for a gluten free, sugar free or low calorie diet. Ingredients
-
2.5 cups fresh or frozen peaches
1 c. vanilla unsweetened almond milk
9 packets PureVia sweetener (from Stevia) or sweetener of your choice
1/2 cup of ice cubes (if using frozen peaches you can omit this ingredient)
Directions
Add ingredients into blender or food processor in order listed. If using Blendtec, press "Ice Cream" button. If using a regular blender or food processor, process slowly until larger pieces are chopped. Continue to process until ice cream is smooth, leaving a few larger pieces of fruit mixed in to the ice cream if you like.
If desired, place into freezer after processing to firm up a bit. Makes 2 very large servings (1.5 cups each = 111 calories for 1.5 c. serving) or 4 smaller servings.

I love my Blendtec. I've had it 10 years. Try this--Pour12 ounces Fat Free Half & Half in your Blendtec. Add 2 tablespoons sugar-free instant pudding. Blend in enough ice to make it very thick. Serve in a 2 tall glasses. Butterscotch is really good in this. About 100 calories each. Fun treat. - 7/6/10
