Easy recipe. Tastes great warm or cold and is a quick breakfast that will keep you going! Easy recipe. Tastes great warm or cold and is a quick breakfast that will keep you going!
Number of Servings: 12

Ingredients

    1 cup rice
    2 cups water
    3 eggs beaten
    2 cups milk
    1/2 cup sugar
    1 tsp. vanilla
    1/3 c. raisins (or 3 mini boxes)
    1 pinch ground nutmeg or cinnamon, or both
    1/2 tsp. salt

Directions

1. Cook rice
2. Preheat oven to 325 degrees F
3. In a large bowl, combine beaten eggs, milk, sugar, vanilla, and salt. Mix well.
4. Stir in rice and raisins.
5. Pour and spread into a 10x6 baking dish.
4. Bake uncovered for 30 minutes.
5. Stir pudding and sprinkle with cinnamon and nutmeg.
6. Bake for 30 minutes more.

Makes 12 servings.
