Ingredients

    * 1 tablespoons olive oil
    * juice of 1 lemon
    * 4 large garlic cloves, minced
    * 1 can whole baby clams
    * 2 cups chopped fresh tomatoes
    * 6 tablespoons dry white wine
    * 1/2 pound linguine
    * 2 cups chopped fresh arugula

Directions

Cook linguine in large pot of boiling water until just tender but still slightly undercooked - just a little firm. Drain pasta.

Heat 1 tablespoon oil in heavy large skillet over medium heat. Add garlic, 1 cup tomatoes, 1/2 of the lemon juice and all of the wine; bring to simmer. Add clams; bring to simmer.

Add arugula and the other cup tomatoes, 1/2 of the lemon juice; cook until arugula is just about half of its uncooked volume.

Add linguini and toss over high heat until coated.

Makes 2 servings.
