Number of Servings: 2

Ingredients

    4 oz whole wheat short-cut pasta
    10.5 oz broccoli, chopped
    2 cloves garlic, minced
    2 tsp anchovy paste
    1/4 tsp hot pepper flakes
    2 tbsp Parmesan cheese

Directions

In a pot of salted, boiling water, cook pasta 5 minutes. Add broccoli and cook 1-2 minutes longer, until al dente.
Reserve 1/3 cup of pasta water, and drain.
In the same pot, heat 1/2 the reserved water.
Add garlic, anchovy paste and pepper flakes. Cook, stirring, until fragrant.
Add broccoli and pasta to the pot along with remaining pasta water, cook until heated through.
Add Parmesan, toss well and serve.

    A good "go to" recipe for meatless Fridays. After experimenting, I reduced the pepper and garlic slightly, doubled the anchovies (best: 2 tbsp anchovy paste + 1 small can whole anchovies) and added 6 oz. carrots (minced, slawed or as baby carrots). - 12/19/14
