Ingredients

    1Tbsp olive oil
    1cube of garlic
    85g carrots
    95g celery
    26g onion
    1can diced tomatoes
    2c vegetable broth
    6ounce ground turkey
    1/4c pankos bread crumb
    3Tbsp liquid egg whts
    3Tbsp parmesan cheese
    1.5tsp dried basil
    2ounce whole wheat spaghetti (dry)


Directions

sautee oil, garlic, carrots, onions, and celery in a pot stir occasionally.
add tomatoes and broth bring to a boil then simmer for 15 minutes
meanwhile, make meatballs
combine turkey, bread crumbs, basil, egg whts, and cheese
make about 12 meatballs brown in a pan
add spaghetti and meatballs to broth
simmer for 10 minutes
this makes 3 servings with 4 meatballs each
