Introduction
These are deliciously rich, soft peanut butter-flavored cookies. They are flourless and use an organic, natural sweetener - Agave (known for its a low GI value). These are also great if you are concerned about using sugar or a chemical sweetener. When I did a taste test, my family & co-workers preferred these over the ones made with regular sugar or raw brown sugar. These are deliciously rich, soft peanut butter-flavored cookies. Ingredients

1 c. peanut butter (smooth or chunky is fine)
1 egg
4 T. agave nectar (not too much or they will be too sweet, less is just fine on this)
Directions
Mix all ingredients together until well mixed. Bake in 375 degree oven for about 8-10 minutes until done. Alternately, you can bake at 350 for 10-12 minutes, it will depend on your oven.
I used "Blue Agave" from Trader Joe's, however "Agave Nectar" like the kind from Costco is fine, too. Enjoy.
