Ingredients

    1 cup black beans, rinsed and drained
    1 cup pineapple, diced
    1 cup red onion, diced
    1/4 cup mint, minced (or to taste)
    1 clove garlic, finely minced
    1 tsp ginger, grated (or to taste)
    Juice of one small lime

Directions

Mix all ingredients together. Salt and pepper to taste, if desired. Chill in fridge before serving.

Makes about 6 1/2-cup servings.
