Ingredients

    1 medium eggplant, cubes, skin on or off(about 1 1/2 pounds)
    2 small zucchini (about 1/2 pound)
    8 cups fresh spinach
    1 medium onion, finelly chopped (about 1/2 cup)
    4 medium tomatoes, each cut into fourths
    1 pound ground turkey, browned
    1/4 cup olive oil
    5 cloves garlic, chopped
    5 grams fresh Oregeno
    1 to 2 teaspoons salt
    1/4 teaspoon pepper

Directions

Cook and stir all ingredients until heated through. Cover and cook over medium heat, stirring occasionally, until vegetables are crisp-tender, about 10 minutes.

6 to 8 servings.
