Introduction

Number of Servings: 5

Ingredients

    1 cup Fiber One ground to cornmeal consistency
    4 TB Kraft Parmesan & Romano cheese
    1 Eggsland large egg
    1/4 c skim milk
    1/2 tsp dried parsley
    1 tsp basil
    1/4 tsp garlic powder
    1/4 tsp black pepper
    1/8 tsp cayenne ground pepper
    1.5 lb chicken tenders
    Pam Butter Spray

Directions

Preheat oven to 425 degrees
Grind the Fiber One in food processor to the consistency of cornmeal. Add spices and cheese, mix well
Beat egg with milk.
Spray baking sheet with Pam Butter Spray(I cover it with foil first to make clean up easier.)
Take chicken from egg wash and dredge in ground Fiber One mixture one piece at a time, place on baking sheet.
When all chicken is on the sheet, spray lightly with Pam butter spray.
Bake at 425 for 20-25 minutes. If you use whole chicken breasts, increase the baking time accordingly.

    Incredible!
    This was excellent, and very easy to make! However, I noticed that the Fiber One cereal (1/5 c. per serving) was not accounted for in the nutrition information. It should total 145.2 calories. Even so, it is something I'll be making again! It was delicious! - 6/10/13
