Introduction

This side dish has been a staple at our family celebrations for years. I've tried to reduce the calorie and fat in it as much as possible...with limited success. Oh well, I guess this is one of those times when portion control is really the only option! This side dish has been a staple at our family celebrations for years. Ingredients

    32 oz. hashed brown potatoes
    3/4 cup butter
    1 teaspoon salt
    1 1/2 cups onion, chopped
    1 cup cream of chicken soup (reduced fat, if possible)
    1/2 cup water
    8 ounces (1 cup) sour cream
    2 cups 2% (or other low fat) cheddar cheese, shredded
    2 cups corn flakes

Directions

Mix all the ingredients EXCEPT the butter and cornflakes.
Spread mixture into a 13 x 9'' glass baking pan
Mix the butter and cornflakes in a separate bowl and spread on top
Bake at 350 degrees for 50 minutes.
Makes 20 1/2-cup servings
