Ingredients

    10g butter
    6 spring onions, trimmed & sliced
    675g frozen baby peas
    4 fresh tarragon sprigs, picked
    225g romaine lettuce, finely shredded
    1l vegetable stock

Directions

Melt butter in a saucepan and sautee the onions over medium heat. Stir in the peas and cook for a further minute. Add the stock and bring to the boil. Add the lettuce and tarragon and continue cooking until wilted. Puree the soup.

Serve warm or chilled. [I'm tossing in some Delmaine Chicken & Tarragon Tortellini]
