Ingredients

    1 Flatout Wrap (I like the Multi-Grain with Flax)
    1/8 cup Pesto (Buitoni Reduced Fat)
    1/4 cup Shredded Mozzerella (2% Milk Reduced Fat)
    1 Quorn "Naked" Chik'n cutlet
    1 cup Fresh Spinach (destemmed)

Directions

Thaw the Chik'n cutlet in the microwave (1 minute, wrapped in moist paper towel), and slice into strips. Set aside.

Lay out Flatout wrap, and smear with pesto sauce. Watch the edges – if it's too close to the edge, it may get messy when you roll it up and eat it.

Sprinkle mozzerella cheese over about 2/3 of the Flatout (don't cover much more than this, so it'll have a nice flap to close your wrap when you roll it up). Lay Chik'n strips and Spinach on top of the cheese.

Roll the wrap, tucking in the edges every quarter turn or so. Slice in half, and refrigerate until lunchtime.

When ready to eat, microwave about 40 seconds (enough to melt cheese, but not wilt spinach), and enjoy!
