Introduction

These smell like Thanksgiving day! These smell like Thanksgiving day!
Number of Servings: 6

Ingredients

    2 cups whole grain flour (I use soft wheat)
    2 Tbl. brown sugar, packed
    1 Tbl. baking powder
    1 1/4 tsp. pumpkin pie spice
    1 tsp. salt
    1/2 cup canned, plain pumpkin (or fresh cooked, but you must drain first)
    1 large egg
    2 Tbl. canola oil
    1 cup nonfat milk

Directions

Combine ingredients. Stir thoroughly, but not too much or batter will be tough. Spray waffle iron with nonstick spray and heat iron. Pour 1/4 cup batter onto hot iron; cook until done, usually about 2 minutes. You can add chopped walnuts or pecans (1/2) cup to the batter, but make sure you account for the extra calories! Serve with pure maple syrup. These can be made ahead and frozen. Just pop in the toaster for a quick breakfast! Makes approx. 6 6-inch waffles.

    These did smell good, but they VERY dry & because of the amount of syrup you had to literally POUR on them, they lost all credit for us on being actually healthy. Nice try, though...and they did smell wonderful! - 1/31/08
