Introduction

Concoction I made with some odds & ends in the fridge. Concoction I made with some odds & ends in the fridge.
Number of Servings: 1

Ingredients

    1 tsp Olive Oil
    3 oz. Pork cut into bite sized pieces
    1/2 large onion, roughly chopped
    1 tsp minced garlic
    1/2 cup cooked navy beans
    2 tbsp feta cheese
    few shakes of parsley

    **salt to taste**

Directions

put olive oil in pan and add onions. Cook until just starting to caramelize.
Meanwhile, put pork with garlic & a few shakes of parsley in a baggie, mix together well.
When onions have almost caramelized, add pork and cook until pork is done.
Add beans, stir well, until mixture is hot.
Turn off heat, put Feta on top and cover, let sit until feta softens/melts, stir well, serve.
