Introduction
Adapted from Banana Oat Bran Bread as submitted by: CHENIA. I added nutmeg and vanilla for seasoning, wheat germ for added nutrients, and raisins and walnuts because they're just yummy. Delicious!! Ingredients

1 c whole wheat flour
1/2 c oat bran (can substitute oat meal, if you don't have oat bran)
2 tbsp wheat germ
1/4 tsp No Salt
1/2 tsp baking soda
1/4 tsp baking powder
1 tbsp cinnamon
1/2 tsp nutmeg
1/2 c packed brown sugar
1/2 c apple sauce
1 tsp vanilla
2 eggs, lightly beaten
2 ripe bananas, mashed
1/2 c walnuts, chopped
1/2 c raisins, not packed
Directions
Preheat oven to 350, & spray mini-muffin pan with cooking spray.
In a bowl, combine flour, oat bran, wheat germ, salt (No Salt), baking powder, baking soda, cinnamon, and nutmeg. Set aside.
In a mixer bowl, combine brown sugar, apple sauce, and vanilla and beat on low speed until blended and mostly dissolved. Add in eggs and mix until combined. Add bananas and mix until combined. While the mixer is running, add in flour mixture slowly, until all is just combined. Remove beaters and stir in chopped walnuts and raisins.
Scoop into mini-muffin pan (filling each up about 3/4 full) and bake for 10-15 min. or until toothpick inserted in the middle comes out clean.
Let cool on counter 10 minutes before removing from muffin pan. Enjoy!
