Ingredients

1 cup scallions chopped (greens and whites)
1 tsp Canola oil
3 strips of bacon cut in small pieces to fry crisp
2 cans - 15 ounces each of pinto beans - rinsed and drained
Directions
Makes 4 .75 cup servings
in a skillet heat 1 tsp canola oil throw in whites of onion and bacon. fry until crisp.
remove grease drain bacon.
Put above mixture back in pan.
Add pinto beans that have been rinsed and drained with 1 cup of water.
Season with coarse salt and ground pepper.
Bring to a boil - reduce heat and simmer. Stirring occasionally until slightly thickened about 5 minutes.
Serve with green scallions tops.
