Ingredients

3 small red potatoes
1 med red pepper
1 large yellow or green pepper
1/2 small red or vidalia onion
12 large fresh eggs
Small amount of milk
1 package Jimmy Dean sausage
Directions
Preheat the oven to 350.
Put the jimmy dean sausage in a skillet and begin to cook the meat. While the meat is cooking over med-high heat cook the potatoes in the microwave. While waiting for the potatoes and meat to cook, you can dice the vegetables to desired size (remembering to occasionally stir the meat).
After the meat is cooked remove the meat by putting into your 9x12 baking dish, and then put the veggies onto the skillet and cook until not crunchy. While they are sauteeing you can dice the potatoes and add them to the meat.
Add the veggies to the meat and potatoes. Then crack the 12 eggs into a bowl and stir with a whisk, add a small amount of milk into the eggs and stir. Then pour the egg batter over the entire mix of meat and veggies.
Bake in the oven on 350 for 30-40 minutes. Makes 12 servings.
