Ingredients

2 large zucchini, sliced
1/4 cup grated parmesan cheese
1/4 Italian style bread crumbs
1 tsp. dried rosemary, rubbed in the palm of the hand
1 tsp. dried basil, rubbed in the palm of the hand
Pepper to taste
Olive oil spray
Directions
* Preheat oven to 425 deg. F
* Spray a 9x12 baking dish or cookie sheet/ jelly pan
* Thoroughly wash and slice to large zucchini into approximately 1/2 slices
* Mix together the cheese, bread crumbs, rosemary, basil and pepper to taste in a small bowl
* Spray the zucchini slices with a bit of the olive oil spray on both sides
* Dredge the zucchini slices in the cheese/ bread crumb mixture until both sides are lightly covered and arrange in the baking pan
* Sprinkle any remaining cheese/ bread crumbs over the zucchini
* Bake for 20-25 minutes until the cheese/ bread crumbs are golden brown and the zucchini are tender
