Introduction

A lazy way to get the flavour of stuffed green peppers. Fast, easy and delicious. A lazy way to get the flavour of stuffed green peppers. Fast, easy and delicious.
Number of Servings: 6

Ingredients

    1 lb lean ground beef
    1 large green pepper, diced
    1 cup long grain rice
    1 1/2 cups water
    4 cups tomato juice
    1/2 tsp garlic powder
    1/2 tsp black pepper
    1/2 tsp salt

Directions

Put rice and water in covered pot until all water has evaporated (rice will be al dente). In a large casserole dish mix ground beef and tomato juice until blended. Add garlic, pepper and salt. Mix. When rice is cooked add to casserole. Stir until all blended well. Place in microwave uncovered and cook on high for 30 minutes, stirring every 10 minutes or so. Remove from microwave and allow to stand for at least 5 minutes before serving. Adjust seasonings to taste. Serve.
