Introduction
I named this counter food because, while I was making it I spilled Feta all over my counter... and then proceeded to scoop it back up off of the counter because it was all the feta I had left. :D But the meal turned out really, really good and I hope you like it! Ingredients

1 cup brown rice (192 grams)
2 1/4 cups water
20 g Extra Virgin Olive Oil
100 g spinach
50 g Red Bell Pepper
40 g Onion
4 oz Feta Cheese
Directions
Combine water and rice and bring to a boil. Then lower heat and simmer for 30 minutes or until all water has been absorbed.
While the rice is cooking, prep the rest of your ingredients. Dice the onions, chop up the red pepper, and chop up the spinach. In a separate, small pot, pour in about half of the olive oil and then add the onions, red pepper, and spinach, heating it on medium-low until spinach reduces and the onions begin to turn soft. Set it aside until the rice is done.
Once the rice has absorbed all water, fluff it with a fork. Pour spinach, red peppers, onion, all olive oil, and the feta into the rice and mix it together until the feta is melty.
Enjoy! This was healthy-ish comfort food for me on a bad day. ;) I had two servings of it as an entire meal but it could be used as a side dish easily. :)
