Introduction

This cool, creamy spread makes great sandwiches for picnics. Adjust the garlic and onion powder to taste. I also recommend spreading it onto sandwiches before it cools completely and making sandwiches ahead of time if you have to make a large batch for a picnic. If you're just making a small batch for home, you can spread a sandwich for yourself ok.

Ingredients

    1 lb Boneless Skinless Chicken Breast - cooked and shredded
    1 can (10.75 oz) 98% fat free Cream of Chicken Soup
    8 oz 1/3 Less Fat Cream Cheese
    1 envelope (1TBsp) Unflavored Gelatin
    3 TBsp Water
    1/3 Cup Light Miracle Whip
    1 1/2 tsp Garlic Powder
    3/4 tsp Onion Powder

Directions

Cook and Shred your chicken breasts. I did this by putting 1 lb of frozen chicken in my Pampered Chef Deep Covered Baker. I microwaved covered 6 min, rotate chicken, 6min, rotate, 2min, 2min til done. Then shred.

- In a medium saucepan, place the soup and cream cheese on med-low. Stir often until warm but not hot. Reduce heat to low.
- In small bowl, mix gelatin powder and water and add to soup mix, stirring well.
- Add mayo (Miracle Whip), garlic powder, and onion powder to soup mixture, mixing well.
- Slowly add chicken to mixture, mixing well.
- Remove mixture from heat.
- Transfer mixture to covered bowl and refrigerate overnight.

- If you are making a large batch for a picnic, allow the mixture to cool for about an hour before spreading onto bread. Put sandwiches in covered container and refrigerate sandwiches.

One batch makes about 8 sandwiches. This recipe does not include bread in the calorie count. You might get more or less sandwiches, depending on how thickly you spread the mixture.
