    1 Can Crushed Tomato (28 oz.)
    3 Cups Zucchini - diced
    2 Cups Summer Squash - diced
    1.5 Cups Raw Onion - diced
    1.5 Cups Peppers (use whatever kind you have)
    3 Cups Fresh Eggplant - diced
    Not exact measurements. Use more or less of the veggies depending on your personal taste.


Put everything in a pan and cook until it's to your preferred doneness.

Add additional seasoning to taste.
