Ingredients

    Cottage Cheese, 600 gram
    Peppers, sweet, red, fresh, 1 medium
    Yellow Peppers (bell peppers), 0.5 pepper, large
    Hazelnuts, 20 nuts
    Peppermint, fresh, 5 tbsp
    Spices according to taste (nutrition information not added for calculation)

    Mushrooms, fresh, 20 small
    Iceberg Lettuce (salad), 0.5 head, medium (6" dia)
    Bread, Rich Bake Multi-Grain, 1 slice, 10 serving

Directions

Chop the peppers, peppermint (you can also use basil or any favorite herb, use a lot), and hazelnuts. Mix with the cheese and any spices you are adding.
For each sandwich use two multi-grain toast slices, line with lettuce and about 4 sliced mushrooms, and add a heaped tablespoonful of chees mixture.
