Introduction

I came up with this when I wanted a low carb lunch and had all these ingredients on hand. It is delicious, if I do say so myself!! :o) It would be easy to make a double or quadruple batch, depending on how many servings you needed. Ingredients

    3 oz boneless, skinless Chicken Breast
    1/4 cup Salsa
    1/8 cup chopped green pepper
    1/8 cup chopped onion
    1/4 tsp ground cumin
    1/4 tsp garlic powder
    1/4 tsp dried parsley flakes
    1/4 tsp red pepper flakes
    salt and pepper to taste
    1 tbsp shredded Cheddar Cheese
    1 cup shredded lettuce
    1/4 cup chopped tomatoes

Directions

Cook chicken breast on stovetop with Pam spray until cooked through.
In a separate bowl, mix salsa, green peppers, onion and seasonings together.
When chicken is done, put salsa mix in with chicken and cook covered until warmed, about 5 minutes. (I also added a little water to avoid burning.)
To serve, place lettuce on a plate, top with chicken and salsa, cheese, and tomatoes.
Serves 1.
