Ingredients

1 egg
1/4 cup unsalted butter
2 teaspoons natural molasses
1/2 cup raw cane sugar
3/4 cup whole wheat flour
1 1/2 teaspoons ground ginger
1/2 teaspoon cinnamon
pinch baking soda
pinch salt
a couple handfulls of rolled oats
Directions
Preheat oven to 375 F
Mix together flour, ginger, cinnamon, baking soda, and salt
In a separate bowl, combine all but 2 TBSP of the sugar (you will use this at the end) with the butter and mix well
Beat the egg and add to the sugar and butter
Add the molasses to the mixture
Stir in the dry ingredients, a little at a time helps
Add the oats and mix well
Roll mixture into little balls and place atop a wax paper lined baking sheet. My mix made 11 cookies.
Press down on each cookie and sprinkle some sugar on top
Bake for 20-25 minutes and let cool!
