Introduction

The sauce is actually a dipping sauce for chicken satay. I made way too much and made this dish with the left overs. I would use less sugar then the recipe calls for, and you can substitute sour cream for the yogurt. Ingredients

    Kraft Mayo Light Mayonnaise (Mayo), 8 tbsp
    Yogurt, plain, low fat, 1 container (4 oz)
    *Soy Sauce, 8 tsp
    Brown Sugar, 8 tsp unpacked
    Onions, raw, .5 cup, chopped
    *Ronzoni, Whole Wheat Penne Rigate,
    Carrots, cooked, 1 cup slices
    Zucchini, 1 cup, sliced
    Chicken Breast, no skin, 9 ounces

Directions

I would use a rotisserie chicken from the grocery store for this dish, just take the meat off and set aside.
cook the penne according to the directions on the box. Steam the carrots until just tender but still have snap. chop the onion and zucchini then set aside.
Mix the mayo, yogurt ,brown sugar, soy sauce and onion in a small bowel until mixed well and non lumpy.
In a large bowl toss the chicken, cooked the penne, carrots and zucchini. Then pour in the sauce mixture. stir and serve. Makes about 12, 1 cup servings.
