Ingredients

    1 onion chopped
    2 carrots, sliced
    1 aucchini, diced
    1 cup cabbage, shredded
    2 cloves, minced
    2-15 oz cans kidney beans, drained and rinsed
    2-14 1/2 oz cans beef broth or 29 ounces Swanson 99% fat free
    1 tsp basil
    1/2 tsp oregano
    1/2 tsp salt
    1/4 tsp black pepper
    2 cups cooked macaroni (I used ronzoni Smart Taste elbows for this recipe)
    1/4 cup Parmesan cheese, grated

Directions

In 3 1/2 - 7 quart Crockpot place the first 11 ingredients and stir well. Cover. Cook on lo heat for 7-9 hours or Hi Heat for 4-5 hours. Add macaroni and Parmesan cheese and stir well.
Makes 8 1 1/4 cup servings
