Ingredients

    8 oz dry fettuccine
    1 tbs olive oil
    1 tbs all purpose flour
    2 cloves of fresh garlic, minced
    1/2 cup sliced red onion
    3 cups of grape tomatos, halved
    8 oz fresh salmon, cooked and flaked
    2 cups fresh baby spinach
    1/4 cup parmesean chease, grated
    8 oz skim milk
    1/3 cup fat free sour cream
    salt and pepper to taste

Directions

grill the salmon, and flake it.

In a large non-stick skillet, over medium heat, add olive oil and sautee garlic until golden brown. aprox 1 min. Add flour and stir constantly. add milk and stir constantly, until thickened. Add tomatos and fresh baby spinach; Heat briefly. Set aside and keep warm.

Cook fettuccine according to package directions. drain. place in large bowl, and toss with salmon and sauce.

makes 4 servings.

    I won't be making this because of the calories per serving and the cholesterol. I love salmon and spinach with garlic, though. - 7/21/10
