Ingredients

    2 tso oil
    2 sticks celery chopped
    2 cloves garlic crushed
    1 onion chopped
    500g chicken breasts, boneless, skinless, cut into 1cm cubes
    2tsp dried thyme
    2tsp dried oregano
    1 tsp chilli powder or to taste
    1/4 tsp cayenne pepper (optional)
    500ml chicken stock, made from a cube
    2 Green peppers, seeded and diced
    2 x 410g cans chopped tomatoes
    1 x 410h red kidney beans, drained and rinsed
    150g brown rice
    1 bay leaf
    4 tbsp chopped fresh flat leaf parsley
