Introduction

I took my mom's recipe and made it healthier by substituting whole grain pasta and low fat mayonaise and salad dressing. You can mix it up by adding chopped bell pepper or other chopped veggies - this is the basic recipe to start from. Ingredients

I box Barilla Whole Grain Medium Shell Pasta
2 cans Pink Salmon (skinless, boneless)
I bottle Kraft Light Cataline Reduced Fat Dressing
    1/2 cup low fat mayonaise
1 cup scallions (green onions), chopped
    1 cup celery, chopped

Directions

Cook pasta according to package directions, drain and rinse with cold water. In a large bowl add dressing and mayonaise to pasta, mix well. Then add both cans of salmon, chopped green onions and chopped celery. Mix well, cover and chill overnight (the longer it sits, the more the flavors will mix together - cooking time above is actually "chilling time"). Stir well before serving, add maynaise if creamier texture is desired.
