Ingredients

    2 chicken leg & thigh pieces
    1/4 cup butter (1/2 stick), melted
    3 medium baking potatoes, quartered
    Dried parsley
    Kosher salt
    Fresh-ground pepper
    3 cloves garlic
    Rosemary (fresh preferred, or dried)

Directions

Preheat oven to 350. Put chicken and potatoes in large roasting pan. Slice garlic cloves and insert under skin. Sprinkle chicken and potatoes with a generous sprinkling of parsley, pepper, salt and rosemary. (Could also use poultry seasoning if you don't have rosemary on hand.) Drizzle potatoes and chicken with melter butter. Bake at 350 for about an hour until chicken is done and potatoes are tender. Baste chicken and potatoes frequently! Serves 3 people.

    Added more chicken quarters, used salt, pepper, and garlic on chicken, and cooked potatoes in a seperate pan. Chicken came out VERY tender. I cooked both for 90 minutes @ 350 and neither was dry! - 1/5/13

    Husband made this with tony's vegetable seasoning and it was very good. Chicken stayed moist and potatoes had good flavor.The only issue I have is with the fattiness of the meat. - 4/9/12

    Incredible!
    This was very good! I used chicken legs and double the amount of chicken but kept the butter amount the same. I was very generous with the parsley and added Mrs. Dash original seasoning. I also had one wheat roll and used the roasted garlic as a spread. - 1/23/12

    This was good, basic food. Nothing exciting, but I probably will make it again if I'm in a hurry, as it's easy. Maybe next time I need to add more herbs... - 8/22/10
