Introduction
I had a lot of zucchini from my garden and found this recipe to can Zucchini Marmalade and it is very good. It makes 8 half pint jars. I also did some with splenda and it is good too. Ingredients
* Zucchini, 6 cup, chopped
* Granulated Sugar, 3 cup ( or splenda)
* *Lemon Juice, 1/2 cup
* Pineapple, Crushed, 1 cup (I get it in it's own juices no sugar added)
* Kraft Jell-o Brand Sugar Free Low Calorie Gelatin Dessert (Jello) ( I used 6 oz of strawberry banana sugar free jello) I am thinking about trying it with lime and other flavors.
Directions
Combine zucchini, sugar and lemon juice in large pan. Bring to boil and let boil for 15 minutes, stirring occasionally. After 15 minutes of boiling time, add the drained pineapple, bring to a boil and boil for 6 more minutes.
Remove from heat and stir in Jello. Place in sterilized half-pint jars, cap and process in a boiling water bath for 5 minutes. Let cool on a rack before storing.
Makes eight half-pint jars. (4 pints. I made some pints also)
