Ingredients

1/4 c. granulated sugar
4 eggs
1 1/2 c. 1% milk
1/2 c. nonfat evaporated milk
2 Tbsp. or 6 packets Truvia
1 tsp. almond extract
Dash of salt
Directions
Caramelize sugar: in a small heavy skillet cook 1/4 cup sugar over medium-high heat until sugar begins to melt, shaking skillet occasionally to heat sugar evenly. Do not stir. Remove from heat as soon as all of the sugar is melted and golden.
Quickly pour caramelized sugar into an 8 x 1-1/2 inch round baking pan, tilting pan to coat bottom.
In a mixing bowl beat eggs. Stir in milk, evaporated skim milk, Truvia, almond extract and salt. Pour into sugar-coated pan.
Set the round pan in a large baking pan set on an oven safe pan. Pour hot water in the large baking pan around the round pan to a depth of 1 inch.
Bake, uncovered, in a 350 degree oven for about 50-60 minutes, or until a knife comes out clean. Allow to cool on a wire rack, then cover and refrigerate for 4-8 hours.
