Ingredients

    2 cups dry split peas
    12 cups water
    1/2 cup diced onion
    6 medium potatoes, chopped to a preferred soup size
    3 carrots, "coined"

Directions

In a large soup pot, add water, split peas and onion. Bring to a boil and add the potatoes. Reduce heat to bring the soup down to a low simmer, stirring frequently. Once the peas start to break up, add the carrots.
Continue to simmer, stirring frequently to avoid the peas sticking to the bottom of the pot. The soup is ready when the peas have completely broken down.

Makes 11 servings of 1 cup each.
