Introduction

This is a slight variation of the cookies from the book. I used applesauce instead of oil and didn't add nuts.I also used half regular and half brown sugar instead of all white. Ingredients



    * 1 medium Banana, very very ripe
    * 1/4 cup or so Applesauce
    * 1/3 cup Granulated Sugar
    * 1/3 cup Brown Sugar
    * 1 teaspoon Vanilla Extract1/3
    * 3/4 cups flour
    * 1/4 teaspoon Salt, .25
    * 1/2 teaspoon Baking Soda
    * 1/4 teaspoon cinnamon
    * 2 cups quick oats
    * 1/2 cup chocolate chips

Directions

Mash the banana in a bowl and then add the sugars, applesauce, and vanilla. In another bowl sift together the flour, cinnamon, baking soda and salt. Add dry to wet ingredients, mixing until just blended. Then add the oats and chocolate chips. The recipe in the book suggests mixing oats in with your hands as you can coat them better- it definitely works but is messy. If you do that, wash your hands and then use a spoon to shape into slightly-smaller-than golf-ball size balls and place 2 inches apart on cookie sheet. Flatten them abit and then bake for 8-12 minutes. Makes 24 cookies.
