Ingredients

    3 Tbsp butter (separated)
    1/4 cup onions minced
    1/4 cup celery minced
    1/4 cup green bell peppers minced
    1 small jar pimientos, drained (optional)
    2 cups COOKED chicken breast, cubed (about 8 ounces)
    3 Tbsp flour
    1 1/3 cups nonfat milk
    1/2 cup sour cream or plain yogurt
    1/2 teaspoon salt
    Freshly ground pepper to taste
    2 cups whole wheat egg noodles, cooked (4 oz uncooked)
    1/2 cup parmesan cheese, grated
    1/2 cup water chestnuts sliced, drained (optional)
    1 cup Kraft 2% shredded cheddar cheese

Directions

Heat oven to 350° F.

In a nonstick skillet heat 1 Tbsp butter andsaute onion, celery, and green pepper for 3 minutes.

In large bowl, combine sauted vegetables, pimiento, pasta and chicken; set aside. Heat the remaining 2 Tbsp butter in same skillet. Stir in flour and cook for 3 minutes; stir in milk, sour cream, salt, and pepper to taste. Cook, stirring, until thickened. Stir into chicken mixture with noodles, water chestnuts, parmesan cheese and 1/2 cup cheddar cheese. Spoon into greased shallow 1 1/2 quart baking dish. Bake for 25 minutes; top with remaining 1/2 cup Cheddar cheese and return to oven for 5 to 7 minutes or until cheese melts and browns lightly.
