Ingredients

    Basic Ingredients:
    2C Old Fashioned Oats
    1C Quick Oats
    1/4C Flax Meal
    1/2 tsp Cinnamon
    1/8 tsp Salt
    1/2C Almonds (coarsly chopped)
    1T Olive Oil
    1/3C Maple Syrup
    1/4C Honey
    1/4C Milk
    1tsp Vanilla
    1/2C Coconut (1/4 reserved)

    Add: (I think I use 1 cup of extras per recipe.)
    - Dried fruit... Craisins, Blueberries, Tropical Fruit
    - Chocolate Chips & PB

    The calorie count for this recipe includes 1 C of Craisins.

Directions

Preheat oven to 350 degrees F.

Process 2 cups rolled oats in blender or food processor until they become flour-like(don't process too much). Mix "oat flour" with dry ingredients (except coconut) in a bowl.

Add all wet ingredients to the dry mixture and stir until well combined.

Spray a muffin tin and divide mixture evenly and gently press into each muffin cup. Recipe should make aprox. 18 bars. Sprinkle coconut on top.

Store in an air-tight container for up to one week.

Bake in muffin tin @ 350 for 15 minutes.

    Incredible!
    I made these last night and my boys and I loved them!! I didn't use the coconut, but used 1/2 cups craisins, 1/4 sunflower seeds, and 1/4 pumpkin seeds. Using a muffin tin is such a great idea since they are perfectly portioned and ready to put in snack bags as soon as they cool. - 6/14/11
