Introduction

So simple and very good. A little higher in fat, but worth every bit! Serve with Mexican rice and steamed broccoli. Add sliced bananas drizzled with honey for desert. So simple and very good. Ingredients

    4 pork chops (about 4 oz each)
    1 tsp olive oil
    1/4 tsp each salt & pepper to taste
    1/3 cup salsa
    1/2 (7-oz) can chopped green chilies, drained
    1 Tbsp cumin
    3 oz lowfat cream cheese (1/3 cup)
    1/3 cup mexican blend 2% shredded cheese

Directions

Season chops with salt & pepper, cook in oil until nearly done.

Combine salsa, green chilies and cumin in a bowl. Pour salsa over chops. Stir into juices, simmer for about 10 minutes. Add water if needed.

Combine cream cheese and cheddar cheese. Top pork chops evenly with cheese mixture. Chops are done when cheese mixture melts. Make sure to top with salsa that is on the bottom of the pan.
